THE BEST FROM THE CARIBBEAN CUISINE



Many people are not familiar with the Caribbean cuisine and the rich ingredients that are used, that is why I want to give a description based on my own experience coming from the Dominican Republic. In countries such as Puerto Rico, Cuba , Haiti and the Dominican Republic a colorful plate is often seen. Vegetables such as bell peppers (all colors) red onions, tomatoes, cilantro, garlic, carrots and beets are used very often. As for spices adobo, culantro(coriander), achiote (annatto), cubitos en polvo (powdered chicken bouillon), oregano and black pepper are the most used.


The dishes that I selected for this page I think are some of the most famous which the countries mentioned above have "shared" and enjoyed for many years. The beef empanadas are a tradition in our plates on special occasions, especially during christmas. Pina colada is a drink that is made very often throughout the year, and has become very famous internationally. The ensalada rusa (Russian Salad) is a traditional salad which is usually made during christmas as well. The mangu with salami, fried white cheese and fried eggs is one of the most traditional dishes from the Dominican republic, which can be served at any time of the day. And last we have the homemade flan. This particular dessert is very delicious and enjoyed by many throughout many countries.


These are just some examples and a little background of the ingredients and spices that are often used in the Caribbean Cuisine.
